Job Responsibilities:

  • Assist the Executive Chef in leading predominantly the Western side of the kitchen team
  • Responsible to plan and oversee all Western culinary production
  • Ensure that the highest standards are consistently maintained and that all outlets are not straying from their original concepts unless instructed otherwise by MGM
  • Ensure smooth efficient operation of all outlet kitchens and that all outlet chefs adhere to their budgeted operating costs of sales
  • Perform all duties in accordance with MGM’s policies and within the realm of MGM’s Mission Statement.
  • Assist Executive Chef and perform duties assigned
  • Oversee the preparation and presentation of high standard of cuisine for multiple kitchen operations
  • Assist in menu development, planning and ongoing improvements
  • Monitor food quality, cost control and hygiene standard in both restaurant kitchens and central production kitchen
  • Taste and monitor food products served throughout the operation, providing feedback where appropriate

Job Requirements:

  • At least 10 years’ experience in medium to large multi outlet hotels including 4 years of high production experience, at least 1 year’s experience at Executive Sous Chef or similar capacity
  • High School Diploma or equivalent, with a qualification in Kitchen Production and Management
  • Excellent language skills in English, Mandarin or Cantonese being an advantage
  • Possess knowledge in PC skills and MS Office Applications
  • Equipped with the managerial skills to train, lead, mentor and motivate a team of highly trained chefs. Must possess a thorough understanding of multi-kitchen operations and staff training. Strong sense in F&B market trends in Macau. Broad management abilities including effective planning and organizational skills, excellent communication and interpersonal skills. Creative, great initiative and good in quality control
  • Must be able to work various shifts including weekends and holidays
