The Role

The Assistant Food & Beverage Manager supports department managers in the daily coordination, supervision, and execution of Food & Beverage operations across all service areas to ensure efficient operations, service excellence, and team support.

Essentials Duties and Responsibilities: 

  • Supports department managers in the execution of daily operational tasks across Premium Services, Concessions, Bars, Front of House, and Warehouse operations.
  • Provides direct operational support to managers during events, staffing shortages, peak service periods, and special functions.
  • Assists managers with team supervision, task delegation, operational follow-up, and service execution to ensure departmental standards are maintained.
  • Acts as a support resource for all Food & Beverage managers to help drive communication, accountability, and operational consistency across the department.
  • Collaborates with managers to identify operational needs, resolve service issues, and maintain efficient day-to-day workflow throughout all Food & Beverage areas.
  • Assign schedules, supports and direct servers, bartenders, and concessionaires’ staff in performing stocking, inventory, and check preparation for concessions.
  • Oversee assigned Food & Beverage functions from origination to execution.
  • Compute department sales statistics, monthly forecasts, annual forecasts, and weekly purchase orders.
  • Ensure the proper set up of the concessions and bars.
  • Responsible for food, beverage, and service procurement.
  • Ensure that team members conform to Coliseo policies and procedures with reference to rules, safety, sanitation, etc.
  • Monitor the client’s needs throughout the event to ensure customer satisfaction and communicate any changes to the proper departments including but not limited to the culinary department, security, and event services.

Supervisory Responsibilities:

Serves as a backup supervisory resource for the Food & Beverage Department, supporting managers across Concessions, Kitchen, Bars, Premium Services, Front of House, and Warehouse operations during daily activities and events. Assists with operational oversight, employee support, work direction, service execution, and issue resolution to help maintain continuity of operations and departmental standards in the absence or support of department managers.

Education and/or Experience

  • Associate degree
  • At least 1 year of previous hospitality management experience required
  • Or equivalent combination of education and experience
  • Food Handling and Alcohol Awareness Certifications

Skills and Abilities

  • Excellent verbal, written and interpersonal skills essential 
  • Excellent organizational, planning, and communication skills
  • Familiarity with Food Handling and related state and federal regulations required
  • Able to work flexible schedules, including weekends, nights and holidays  
  • Strong customer service orientation
  • Bilingual – English and Spanish

Computer Skills

  • Proficient in F&B Software, Micros preferred

Certificates, Licenses, Registrations
