SUMMARY

Maintain production area and equipment in a clean, orderly, and sanitary condition. Assist Kitchen and Steam room personnel and complete master sanitation scheduled duties. Support Processing by proactively looking at the schedule in advance and prepare for those functions.

ESSENTIAL DUTIES AND RESPONSIBILITIES INCLUDE THE FOLLOWING. OTHER DUTIES MAY BE ASSIGNED

  • Perform various Processing Operation duties (Kitchens, Bindler, Sollich/Oka & Knobel) in a Backup or supplemental role

  • Performs a Processing walk through to identify and resolve any GMP Food Handling/Storage violations.

  • Cleans, sanitizes, and dries an array of production and some lab equipment, machinery, and utensils.

  • Proper care, disassembly and reassembly of various kitchen Processing equipment required

  • Cleans sanitation equipment such as mops, buckets, and towels

  • Master sanitation and housekeeping such as walls, floors, lights, pipes, and equipment.

  • Return cleaned utensils and equipment to proper production or storage areas and maintain those areas.

  • Dump trash and remove cardboard and pig scrap recycling, animal feed and compost from all production areas

  • Ensure that all returned ingredients are in clean sanitary condition and properly labeled.

  • Review and follow detailed checklist provided.

ADDITIONAL DUTIES

  • Check cocoa butter and chocolate liquor tanks, add as instructed by supervisor or leader, and record the quantity and lot numbers

  • Perform other production utility functions and relieve other utility positions or minor Kitchen jobs as requested by Kitchen Lead Person or Supervisor

  • Required to assist in changeovers in all production areas and pump chocolate as needed

  • Changing over mini-temps, supporting other processing changeovers as needed.

  • Mixing colored chocolates and performing verification checks on colorimeter

  • Performing cycle counts checks on colorants and colored chocolates

  • Maintain organization of intermediate room, on-hand creams

  • Set up cherry sort area

  • Relieve on mould feed, perform mould swaps and perform other various processing utility functions as needed.

  • Maintain home department in a clean and orderly manner

  • Maintain 6-S throughout processing area

  • Train new employees as required

  • Follow all standard operating procedures

  • Comply with all safety policies, report safety violations, and attend team and safety meetings

  • Report problems regarding food safety to supervisor or manager.

  • Perform other related duties as requested by Leader/Supervisor

  • Required to work until end of production shift daily
